Garry's Jerk Marinade
Ingredients
1 Onion, chopped

1/2 cup Scallion, chopped

1 tsp Salt

4 tsp Jamaican pimiento, (allspice)

1 tsp Nutmeg

1 tsp Cinnamon

6 Habanero chiles

1 tsp Black pepper

4 Garlic cloves

2 tbsp Fresh ginger root, grated

2 tbsp Lime juice

1/4 cup Olive oil

1/2 cup Red wine vinegar

4 tbsp Soy sauce

4 tbsp Dark rum

2 tbsp Brown sugar

2 tbsp Fresh thyme

Preparation
Instructions: Combine all ingredients and blend in food processor. Marinate meat several hours before cooking.
