Cut pork into 1/2" cubes. Combine remaining ingredients and pour over pork; cover and refrigerate for one hour. Thread pork onto skewers and grill 6" above a solid bed of glowing coals. Turn, basting with marinade, until browned on all sides. Serve with hot cooked rice, if desired, and Dipping Sauce. Dipping Sauce Combine thoroughly: 1 cup pineapple juice, 2/3 cup peanut butter, 2 cloves garlic, 2 tablespoons brown sugars 1 1/2 tablespoons lemon juice, 1 tablespoon soy sauce, and 1/2 teaspoon crushed red pepper. |
